Serves 10 servings

Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Drink (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

For the Citrus Syrup: Place all the components into a pot, heat until it reaches a simmer, mixing to dissolve. Next, take off the heat allowing it to reach room temperature fully. Transfer into a sterilised bottle, close it keeping it in the refrigerator, it will last for about four weeks.

For the Cocktail Base: Pour the specified liquids in a big jug, allow it to infuse for 60 minutes, then pass it through preferably using muslin, so it's perfectly clear.

To serve: Add 85ml of the batch mix to a stirring glass packed with ice, gently stirring lightly for about 60 seconds to cool it down. Filter into a frosted cocktail glass or similar, garnish with a few cranberries and finish with a light spray of the essential oil above the glass.
